ESSENTIAL DUTIES AND RESPONSIBILITIES

JOB SUMMARY

We are looking for a creative individual with experience and management skills for the position of Executive Chef. The Executive chef should be capable of leading a culinary team of 50 in a Resort consisting of two different properties and 6 different concept restaurants.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Concept design for 6 different restaurants in collaboration with the Food & Beverage Manager under the instruction of the Director of Operations
  • Menu design for all food & beverage outlets of the resort in collabortation with the Food & Beverage Manager.
  • Manage and present food & labor cost in all food & beverage outlets
  • Approves the requisition of products and other necessary food supplies
  • Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles
  • Develops standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs
  • Develops banquet kit in collaboration with the Food & Beverage manager and thr reservation department for tailor made events
  • Interview, select, train, supervise, counsel and discipline all employees in the department
  • Lead and train a 50 person culinary team
  • Lead and train the 6 chefs de cuisine of every hotel restaurant
  • Manage complaints and problems of the kitchen in both Resort Hotels
  • Ensure, in collaboration with the Food & Beverage Manager, the excellent operation of all food & beverage outlets of the Resort

NECESSARY QUALIFICATIONS

  • Diploma from a greek or foreign hospitality school or cookinh school
  • Excellent use of English
  • 5 years of experience in a similar position in a 5 star hotel
  • Knowledge budgeting food cost & menu engineering
  • Excellent management skills
  • Excellent safety and sanitation knowledge
  • Excellent collaboration skills and team spirit
  • Ability to train and lead a team of 50 people
  • Creativity in their field
  • Excellent knowledge and ability to develop standard recipes for a Βuffet Restaurant
  • Excellent knowledge and ability to develop standard recipes for an a la carte Restaurant
  • Knowledge of pastry and bread making will be appreciated

Necessary requirements of working in a kitchen environment in Greece.
